Seared Scallops With Warm Tuscan Beans

We have been trying to eat a little more healthy in our house lately.  You know how those pounds creep on over the years?  So, I picked up a new cookbook the other day that had 1500 calorie a day mix and match menus.  I was surprised to see so many good recipes in it!  It is by Cooking Light and is called Mix and Match Low Calorie Cookbook.  This is the first recipe I tried and it was a winner for sure.

It was full of flavor and the best part was that a serving is only 426 calories, including a slice of garlic bread!  And the garlic bread is a must, for sopping up every last drop of the delicious sauce!
